Leavening Agents & Yeast
Baking powder, baking soda, and active dry yeast rarely scale on a strict 1:1 linear basis when tripling or quadrupling recipes. Too much leavener causes baked goods to over-expand, collapse in the center, and leave a bitter metallic aftertaste. For 3× or greater batches, increase leavening by 1.25× to 1.5× rather than full 3×.
