Slow-Morning Croissants & Cappuccino
Not every recipe needs to be cooked. This is a guide to the most civilised breakfast there is — and how to make it feel like more than the sum of its parts.
Instructions
- 01
Warm the croissants in a 160°C oven for 4 minutes — never a microwave.
- 02
Steam the milk to 65°C with a thick microfoam. If using a moka, gently froth with a French press.
- 03
Pull two espressos and pour the milk slowly, holding the foam back, then floating it on top.
- 04
Plate the croissants with butter and jam alongside. Sit down. No phone.
- ✦A pinch of cinnamon on the foam is quietly transformative.
- ✦Cold milk steams better than room-temperature milk.
