Slow-Morning Croissants & Cappuccino

Instructions

Warm the croissants in a 160°C oven for 4 minutes — never a microwave.

Steam the milk to 65°C with a thick microfoam. If using a moka, gently froth with a French press.

Pull two espressos and pour the milk slowly, holding the foam back, then floating it on top.

Plate the croissants with butter and jam alongside. Sit down. No phone.

- ✦Cold milk steams better than room-temperature milk.
