Almond Butter Protein Mix

If you're after something quick, nutritious and energy-boosting, the Almond Butter Protein Mix is a perfect choice. Built on healthy fats, protein and a rich nutty flavour, it works just as well for breakfast as it does for post-workout fuel or a midday snack. It needs no cooking and comes together in a few minutes — a natural lighter cousin to the Chia Protein Pudding when you want something even faster.

The Method

Instructions

  1. 01

Add the almond butter: spoon 2 tablespoons of almond butter into a mixing bowl.

  2. 02

Add the protein powder: tip in 1 scoop of your preferred vanilla or chocolate protein powder.

  3. 03

Pour in the almond milk: slowly add the almond milk while stirring to bring everything together.

  4. 04

Mix thoroughly: use a spoon or small whisk to mix until the texture is creamy and lump-free.

  5. 05

Add the extras: stir in the chia seeds, honey or stevia, and a pinch of cinnamon if using.

  6. 06

Adjust the consistency: add a splash more almond milk if it's too thick, or a little more protein powder if it's too thin.

  7. 07

Serve: enjoy straight away as a creamy protein mix, or chill for 10–15 minutes for a thicker pudding-like texture.

— Chef's Notes —
  • Scatter crushed nuts on top for extra crunch.
  • Blend with a handful of ice for a smoothie-style drink.
  • Swap almond butter for peanut butter for a different flavour.
  • Stir in a teaspoon of cocoa powder for a chocolate twist.
