Instructions

Prepare the ingredients: slice the chicken sausages and avocado, and rinse any vegetables you're adding.

Cook the sausages: heat a pan over medium heat with the oil or butter, then cook the sausage slices for 4–5 minutes until browned and cooked through.

Cook the eggs: in the same pan, crack in the eggs and cook them fried or scrambled, finishing with salt and black pepper.

Add the vegetables (optional): toss in the spinach or mushrooms and sauté for 2–3 minutes until softened.
